Spicy Chicken Burrito Bowls

Ingredients
- 1 lb boneless skinless chicken tenderloins
- 2 tsp cumin
- 1 tsp garlic powder
- 1/2 tsp cayenne pepper
- salt, to taste
- 1 cup brown rice
- 1/3 cup cherry tomatoes
- 8 oz. can black beans
- 2 ears of corn, husked
- cilantro, for garnish
- spring mix lettuce
- 1 avocado
- 1/2 red onion, diced
- cholula, for garnish
Instructions
- prepare the chicken by cutting the chicken into small cubes. drizzle with 1 tbsp olive oil and season with cumin, garlic powder, cayenne pepper, and salt. toss to combine.
- in a pan over medium-high heat, drizzle a little olive oil, and cook the chicken for 6-8 minutes or until cooked through. the internal temperature of the chicken should be 165 degrees.
- prepare the rice according to package.
- prepare the bowl by topping spring mix lettuce with rice and chicken. add the other ingredients as toppings. garnish with cilantro and cholula hot sauce.
