Lemon Garlic Noodles & Meatballs

Ingredients
- 1 lb ground chicken or turkey
- 1/4 cup fresh parsley, chopped fine
- 1/4 cup feta cheese
- 1/4 cup almond flour
- 1 large egg
- 6 garlic cloves, minced
- red pepper flakes, to taste
- salt, to taste
- zucchini noodles (I bought prepackaged from sprouts)
- 2 tbs ghee or butter
- 1/2 lemon
- parmesan cheese, to garnish (optional)
Instructions
- in a bowl, combine the chicken/turkey, egg, almond flour, feta cheese, 3 garlic cloves, parsley, red pepper flakes, and salt.
- for best results, make the meatball mixture 24 hours before cooking (no big deal if not!)
- using an ice cream scoop, form the meatballs and cook on a pan/skillet on medium-high heat with olive oil. cook until browned and cooked through. about 4 minutes per side (give or take).
- when the meatballs are finished cooking, set aside. in the same pan, melt the ghee and sauté 3 garlic cloves then add the zoodles and lemon juice. then season with salt and red pepper flakes.
- cook for about 3 minutes.
- serve immediately and top with meatballs and parmesan
