Lemon Garlic Noodles & Meatballs

Ingredients

  • 1 lb ground chicken or turkey
  • 1/4 cup fresh parsley, chopped fine
  • 1/4 cup feta cheese
  • 1/4 cup almond flour
  • 1 large egg
  • 6 garlic cloves, minced
  • red pepper flakes, to taste
  • salt, to taste
  • zucchini noodles (I bought prepackaged from sprouts)
  • 2 tbs ghee or butter
  • 1/2 lemon
  • parmesan cheese, to garnish (optional)

Instructions

  1. in a bowl, combine the chicken/turkey, egg, almond flour, feta cheese, 3 garlic cloves, parsley, red pepper flakes, and salt.
  2. for best results, make the meatball mixture 24 hours before cooking (no big deal if not!) 
  3. using an ice cream scoop, form the meatballs and cook on a pan/skillet on medium-high heat with olive oil. cook until browned and cooked through. about 4 minutes per side (give or take).
  4. when the meatballs are finished cooking, set aside. in the same pan, melt the ghee and sauté 3 garlic cloves then add the zoodles and lemon juice. then season with salt and red pepper flakes.
  5. cook for about 3 minutes.
  6. serve immediately and top with meatballs and parmesan
