Spicy Vodka Pasta

Ingredients

  • 1 box of banza rigatoni pasta
  • 1 small shallot
  • 1/4 cup olive oil
  • 3 garlic cloves, minced
  • 1/3 cup tomato paste
  • 1/2 cup nut pods original creamer
  • 1 tbs vodka
  • red pepper flakes
  • salt
  • pepper
  • 1/4 cup chicken broth
  • parmesan cheese
  • fresh basil

Instructions

  1. cook banza according to package
  2. in a large pan, heat the olive oil and saute the shallot and garlic, cook until soft
  3. add the tomato paste and saute for about 1 minute
  4. add the nut pods and season with salt, pepper, and red pepper flakes, all to taste
  5. add the vodka and stir until evaporated
  6. pour the cooked pasta into the sauce and the chicken broth, stir to combine
  7. top with fresh parmesan and fresh basil
