Lemon Garlic U.S. Farm-Raised Catfish Dinner

Ingredients
lemon garlic catfish
- 2 U.S. Farm Raised Catfish Filets
- 1/4 cup olive oil
- 2 tbsp parsley, chopped
- 2 garlic cloves, minced
- 1 lemon
- salt, to taste
- pepper, to taste
garlic mashed potatoes
- 1.5 lb red potatoes
- 1/4 cup olive oil
- 2 garlic cloves, minced
- 1/2 cup chicken broth
- 5 oz boursin garlic & herb cheese
- salt, to taste
- pepper, to taste
Instructions
- preheat oven to 425 degrees.
- in a small bowl, add 1/4 cup olive oil, 2 minced garlic cloves, and 2 tbsp parsley.
- lay the U.S. farm-raised catfish filets on a sheet pan and season with salt and pepper. pour the olive oil mixture over the filets and top with fresh lemon juice.
- place the sheet pan in the oven to bake for 15 minutes.
- bring a large pot of water to a boil and add the red potatoes. let the potatoes boil until you can break apart easily with a fork.
- once the potatoes are finished boiling, drain them and set aside.
- return the pot to the stove and turn the heat to low. add 1/4 cup of olive oil and add the garlic cloves. sauté for 2 minutes.
- add the potatoes back to the pot and slightly mash.
- pour in 1/2 cup chicken broth and add the boursin cheese.
- mash well and season with salt and pepper.
- serve the U.S. farm-raised catfish over the mashed potatoes and garnish with fresh parsley and lemon juice.
- serve with your favorite vegetable and enjoy!
