Mexican Whole Roasted Chicken

Ingredients

  • 4 lb whole chicken
  • 1 pack Siete taco seasoning
  • 2 bell peppers, diced
  • 2 large onions, quartered
  • 2 poblano peppers, diced
  • 5 tbsp olive oil
  • 1 whole garlic
  • salt, to taste
  • 1 lime, for garnish
  • cilantro, for garnish

Instructions

  1. preheat oven to 450 degrees
  2. dice the peppers and onions. place them in the skillet and cut the garlic down the middle and place the two halves cut side facing down. leave the skin of the garlic on. 
  3. drizzle 2 tbsp olive oil and season with salt. toss to combine.
  4. place the chicken over the veggies and pat dry with a paper towel.
  5. place the taco seasoning in a small bowl and add 3 tbsp olive oil. mix with your hands to form a paste. layer the paste all over the chicken.
  6. bake for 65-75 minutes or until the internal temperature is 165 degrees. stir the onions every 30 minutes or so.
  7. serve with fresh lime juice and cilantro on top and your choice of rice!
