Ingredients

  • 16 oz bag of kale
  • 2 cups rotisserie chicken
  • 1 avocado
  • 3 green onions, diced
  • 3 tbsp fresh mint, minced
  • parmesan cheese, to garnish (optional)
  • 1 cup peanuts, chopped
  • 3 tbsp sesame seeds, toasted
Peanut Dressing
  • 2 garlic cloves
  • 1 tbsp. sesame oil
  • 1 tbsp. peanut butter
  • 3 tbsp. rice vinegar
  • 1 tbsp. coconut aminos
  • 2 tsp. ginger, grated
  • 1 tsp. salt
  • 1 tsp. pepper

Instructions

Salad
  1. prepare the kale by chopping into fine pieces, then place in a large bowl with the peanut dressing drizzled on top. 
  2. toss to combine. *TIP: massage the dressing into the kale with your hand*
  3. in a small pan over low heat, place the sesame seeds in the pan and toast until golden brown.
  4. while the sesame seeds toast, add the minced mint, chopped peanuts, diced green onion , chicken, and diced avocado to the salad.
  5. top the salad with sesame seeds and parmesan cheese.
  6. serve and enjoy!
Dressing
  1. in a blender or food processor, combine garlic, sesame oil, peanut butter, rice vinegar, coconut aminos, ginger, salt, and pepper. 
  2. blend until smooth and runny.
