Open-Faced Chicken Gyro

Ingredients

  • 1.5 lb boneless skinless chicken thighs
  • 1 lemon
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp dried rosemary
  • 1/2 tsp dried oregano
  • 2 garlic cloves, minced
  • romaine lettuce
  • 1 bell pepper, I used orange
  • 1/2 red onion
  • feta cheese
Homemade Tzatziki
  • 1/2 cup plain greek yogurt
  • fresh dill, minced
  • 1/2 lemon
  • 2 garlic cloves, minced
  • 1/2 cucumber, minced
  • salt, to taste

Instructions

  1. marinate the chicken. take a large plastic bag and place the chicken inside with the juice of one lemon, olive oil, salt, pepper, rosemary, oregano, and garlic. set aside for at least 30 minutes.
  2. while the chicken marinates prep your other ingredients and make the homemade tzatziki sauce.
  3. cook the chicken in a hot skillet for about 4 minutes on each side or until the internal temperature is 165 degrees.
  4. once the chicken is cooked, cut it into bite sized pieces.
  5. assemble your gyro on the romaine lettuce with chicken, tzatziki sauce, red onion, bell pepper, and feta cheese
  6. enjoy! I served mine with a side of baked potato slices!
Tzatziki
  1. for the tzatziki sauce combine the greek yogurt, lemon juice, fresh dill, garlic, salt and cucumber.
