Quick & Easy Taco Skillet

Ingredients
- 1 lb ground turkey
- 15 oz can black beans, drained and rinsed
- 10 oz can rotel tomatoes, drained and rinsed
- 2 cups cauliflower rice
- 1/2 cup salsa (I used Mateo's)
- 1 orange bell pepper
- 1/2 red onion
- 1 pack of siete spicy taco seasoning (or mild)
- 1/3 cup water
- 1 avocado
- cilantro, to garnish
- pickled jalapenos, to garnish
- mexican shredded cheese
- siete tortilla chips, for serving
Instructions
- preheat oven to 375 degrees
- in a medium sized skillet over high heat, cook the ground turkey with the diced onion and bell pepper until the meat is cooked through and no longer pink.
- while the meat cooks, drain and rinse the canned beans and tomatoes.
- once the meat is cooked add the pack of taco seasoning and 1/3 cup of water and 1/2 cup of salsa. stir to combine.
- add the beans and tomatoes to the skillet. stir to combine and cook for 2 minutes.
- add the 2 cups of cauliflower rice. stir to combine and saute for 2 minutes.
- top with shredded cheese and bake in the oven for 5 minutes or until the cheese is melted.
- top with avocado, cilantro, and jalapenos. serve with siete tortilla chips and enjoy!
