Quick & Easy Taco Skillet

Ingredients

  • 1 lb ground turkey
  • 15 oz can black beans, drained and rinsed
  • 10 oz can rotel tomatoes, drained and rinsed
  • 2 cups cauliflower rice
  • 1/2 cup salsa (I used Mateo's)
  • 1 orange bell pepper
  • 1/2 red onion
  • 1 pack of siete spicy taco seasoning (or mild)
  • 1/3 cup water
  • 1 avocado
  • cilantro, to garnish
  • pickled jalapenos, to garnish
  • mexican shredded cheese
  • siete tortilla chips, for serving

Instructions

  1. preheat oven to 375 degrees
  2. in a medium sized skillet over high heat, cook the ground turkey with the diced onion and bell pepper until the meat is cooked through and no longer pink.
  3. while the meat cooks, drain and rinse the canned beans and tomatoes.
  4. once the meat is cooked add the pack of taco seasoning and 1/3 cup of water and 1/2 cup of salsa. stir to combine.
  5. add the beans and tomatoes to the skillet. stir to combine and cook for 2 minutes.
  6. add the 2 cups of cauliflower rice. stir to combine and saute for 2 minutes.
  7. top with shredded cheese and bake in the oven for 5 minutes or until the cheese is melted.
  8. top with avocado, cilantro, and jalapenos. serve with siete tortilla chips and enjoy!
