Salsa Chicken & Rice Bake

Ingredients

  • 1 lb boneless skinless chicken thighs
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 white onion, diced
  • 1 cup basmati rice, uncooked
  • 1 cup chicken broth
  • 1 cup salsa
  • 2 tbsp olive oil
  • 2 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt, to taste
  • Pepper, to taste
  • Cilantro, optional for garnish
  • Lime, optional

Instructions

  1. Preheat the oven to 400 degrees.
  2. Drizzle olive oil on the chicken thighs and season each side with salt and pepper.
  3. Drizzle a little olive oil in a hot skillet and sear each side of the chicken for 2-3 minutes. Once charred and partially cooked, set the chicken aside.
  4. Add uncooked rice to the skillet over medium heat and sauté for 1 minute.
  5. Add the onion and bell pepper. Saute for 2 or so minutes.
  6. Season with cumin, garlic powder, paprika, salt, and pepper.
  7. Pour in the salsa and chicken broth. Stir to combine.
  8. Add the chicken back to the skillet and place the skillet in the oven to bake for 30 minutes.
  9. Once it is finished cooking, remove from the oven and top with fresh cilantro and lime juice.
  10. Serve warm and enjoy!
