Spicy Shrimp Red Curry

Ingredients

  • 1/2 lb - 1 lb peeled and deveined shrimp
  • 1/2 white onion, thinly sliced
  • 2 tsp garlic
  • 3 tsp ginger, grated
  • 1 tbsp olive oil
  • 2 tbsp red curry paste
  • 1/3 cup chicken broth
  • 1/3 cup coconut milk
  • salt, to taste
  • red pepper flakes, to taste
  • 1 lime
  • 1/2 cup broccoli
  • 1/3 cup snap peas
  • 1/4 cup edamame
  • 1/2 cup - 1 cup white rice
  • green onion, to garnish
  • cilantro, to garnish
  • jalapeño, to garnish

Instructions

  1. in a pot over medium heat, sauté onion, ginger, and garlic in 1 tbsp olive oil. sauté for about 2-3 minutes.
  2. add the coconut milk, chicken broth, red curry paste, and season with salt, red pepper flakes, and lime juice. 
  3. turn the heat to low and bring to a simmer.
  4. add the veggies and stir to combine. 
  5. once they are softened, add the shrimp.
  6. serve over rice and top with fresh jalapeño, cilantro, and green onion.
