Spicy Shrimp Red Curry

Ingredients
- 1/2 lb - 1 lb peeled and deveined shrimp
- 1/2 white onion, thinly sliced
- 2 tsp garlic
- 3 tsp ginger, grated
- 1 tbsp olive oil
- 2 tbsp red curry paste
- 1/3 cup chicken broth
- 1/3 cup coconut milk
- salt, to taste
- red pepper flakes, to taste
- 1 lime
- 1/2 cup broccoli
- 1/3 cup snap peas
- 1/4 cup edamame
- 1/2 cup - 1 cup white rice
- green onion, to garnish
- cilantro, to garnish
- jalapeño, to garnish
Instructions
- in a pot over medium heat, sauté onion, ginger, and garlic in 1 tbsp olive oil. sauté for about 2-3 minutes.
- add the coconut milk, chicken broth, red curry paste, and season with salt, red pepper flakes, and lime juice.
- turn the heat to low and bring to a simmer.
- add the veggies and stir to combine.
- once they are softened, add the shrimp.
- serve over rice and top with fresh jalapeño, cilantro, and green onion.
