Spicy Vodka Pasta

- Bring a pot of salted water to a boil and cook pasta until al dente. *Note: Remember to save 1/2 cup of pasta water before straining.
- In a large pan over medium heat, drizzle olive oil. Sauté onion and garlic and season with salt, pepper, and red pepper flakes. Sauté for 2-3 minutes or until soft and fragrant.
- Add tomato paste to the pan and stir to combine. Cook together for about 1 minute.
- With the heat on medium-low, pour in the vodka and stir. Bring to a simmer and stir for about 1 minute.
- Add butter and stir it into the sauce.
- Slowly pour and stir in heavy cream. Once it is mixed well, taste and season with more salt and pepper to your liking.
- Pour and mix in the reserve pasta water.
- Add cooked noodles to your sauce and stir to coat and combine.
- Serve with freshly grated parmesan and enjoy!
