Sun-Dried Tomato Pasta

Ingredients

  • 1 pack taste republic gluten-free linguini
  • 1 lb ground chicken sausage
  • 1/2 red onion, minced
  • 3 garlic cloves, minced
  • 1/2 lemon, juiced
  • 1/3 cup nut pods original oat creamer
  • 3 tbsp parmesan cheese
  • 1/2 cup sun dried tomatoes, diced
  • 1 cup broccolini
  • red pepper flakes, to taste
  • salt, to taste
  • parsley, to garnish (optional)

Instructions

  1. prepare the pasta according to the package and set it aside.
  2. in a large pot over medium-high heat, drizzle olive oil, and add the minced onion and the chicken sausage. cook until brown and then drain any excess grease.
  3. add garlic and broccolini, season with salt, and saute for about 4 minutes.
  4. add the diced tomatoes and stir to combine. saute for about 2 minutes.
  5. add the cooked pasta to the pot and stir to combine.
  6. pour in the nut pods, add lemon juice, and parmesan cheese. season with red pepper flakes and more salt if you would like.
  7. serve with fresh parsley and fresh parmesan!
