Sweet & Spicy Chicken Stir Fry

Ingredients
- 1 lb thinly sliced chicken breast
- about 1/2 cup of green beans
- 1 bell pepper, thinly sliced
- 1/3 cup mushrooms
- 2 limes
- 4 garlic cloves, minced
- 1 tbs sambal oelek
- red pepper flakes, to taste
- 1 tsp sesame oil
- 1/3 cup coconut aminos
- 1/2 tsp ground ginger or fresh
- 1/2 tsp garlic powder
- green onions
- white rice
Instructions
- thinly slice and dice the chicken breast and set aside in a bowl.
- in a separate bowl make the marinade/sauce, combine the juice of one lime, garlic, coconut aminos, sambal oelek, red pepper flakes, sesame oil, ginger, and garlic powder.
- pour half of the sauce on the chicken and set aside to marinate, save the rest of the sauce for later.
- while the chicken marinates, prep your other ingredients. chop the green beans (be sure to trim the ends), slice the mushrooms, slice the bell pepper, and dice the green onion.
- in a wok or large pan on medium-high heat, cook your chicken until no longer pink.
- add in the veggies and remaining sauce. saute until the veggies are soft.
- pair with white rice and top with fresh green onion and lime.
