Spicy Chickpea Curry

Ingredients
- 1 can of chickpeas
- 1/2 white onion
- avocado oil
- 3 garlic cloves, minced
- salt, to taste
- red pepper flakes, to taste
- 1/2 jalapeno, diced
- 1 bell pepper, diced
- 1/3 cup red curry paste
- 1/4 cup unsweetened coconut milk
- 1 tbs coconut aminos
- 2 tsp ginger
- 3 tbs chicken broth
- green onion, for garnish
- cilantro, for garnish
- white rice
Instructions
- in a medium-high heat pot/wok, saute the onion with 1-2 tbs of olive oil. saute for about 1-2 minutes
- add the garlic and season with salt, saute for 1 minute
- add 1 tbs of olive oil and add the bell pepper and jalapeno. saute for 3-4 minutes
- add the chickpeas and saute for about 3 minutes. (add more oil if needed)
- add the red curry paste and red pepper flakes, stir to combine
- once mixed add the coconut milk, chicken broth, 1/2 lime, and ginger. stir to combine and bring heat to low-medium
- bring to a simmer for about 2-3 minutes
- lastly throw in diced green onion
- serve with rice, fresh cilantro, and lime
