Ingredients
- 1 l b bonelsss skinless chicken thighs
- olive oil
- salt
- pepper
- 5 cups cherry tomatoes, halved
- 1 tsp oregano
- 1 tsp dried parsley
- 1/2 tsp dried thyme
- 1 shallot, minced
- 3 garlic cloves, minced
- fresh basil
- burrata cheese
- balsamic vinegar
- arugula
- banza rice
Instructions
- prepare the banza rice according to the package.
- prepare the chicken. drizzle olive oil on the front and back of the chicken and season with salt and pepper to taste.
- in a skillet over high heat, drizzle olive oil and begin to cook the chicken. cook on each side for about 6 minutes or until the internal temperature is 165 degrees. once cooked set aside.
- in a small pan drizzle olive oil and add the minced shallot and garlic. saute for 1-2 minutes or until soft and fragrant.
- add the tomatoes, oregano, thyme, and parsley to the pan. saute the tomatoes until soft.
- assemble your plate or bowl. the base should be banza rice, then add arugula and drizzle olive oil and balsamic vinegar on top. season with salt and pepper if needed. next add the chicken and then burrata. lastly, top with the tomato mixture and fresh basil. drizzle a little more balsamic vinegar on top and enjoy!
