  1. preheat oven to 400 degrees.
  2. prepare the seasoning. in a small bowl, combine 1 tbsp garlic powder, 1 tsp red pepper flakes, 1 tsp dried oregano, 1/2 tsp pepper, 1/4 tsp dried parsley, and 1 tsp salt.
  3. prep all the veggies by slicing them and laying them on a baking sheet. drizzle with olive oil and cover in seasoning. place the baking sheet into the oven and bake for 20-25 minutes.
  4. while the veggies bake, prepare the quinoa. once cooked, season with salt and drizzle 1 tbsp olive oil. stir to combine.
  5. serve the roasted veggies on a bed of quinoa. top with ranch and lemon juice.
