Greek Style Pasta Salad

Ingredients
- 1 lb pasta, I used rotini
- 1/2 cup cherry tomatoes, diced
- 1 cucumber, peeled and diced
- 1/3 cup kalamata olives, diced
- 1/3 cup feta cheese crumbles
- 2 tbsp fresh dill, minced
- 3/4 cup olive oil
- 1/3 cup red wine vinegar
- 1 tsp salt
- 1 tsp oregano
- 2 garlic cloves, minced
- pepper, to taste
Instructions
- prepare the dressing. in a small bowl or jar, combine 3/4 cup olive oil, 1/3 cup red wine vinegar, 1 tsp salt, 1 tsp oregano, 2 minced garlic cloves. stir or shake well to combine.
- in a large bowl, add cooked pasta, cherry tomatoes, cucumber, olives, feta cheese, and dill. drizzle as much dressing over the top to your liking. season with salt and pepper. mix to combine.
- place in the fridge to cool or serve immediately.
