This easy dish is perfect for spring! It's light, fresh, and full of flavor. I made this to bring over to my mom's house for a Mother's Day lunch. I assembled this entire dish in my Rubbermaid TakeAlongs® container and then sealed it shut to bring over to my mom for a Mother's Day lunch. These containers travel perfectly because they stack easily and seal securely. It couldn't have been easier and the recipe was a hit! Ingredients
- 1 lb pasta
- 1 tbsp olive oil
- 1 cup greek yogurt
- 1 cucumber, finely chopped
- Juice of 1 lemon
- 2 garlic cloves, minced
- 2 tbsp fresh dill, chopped
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- Cook pasta according to package instructions. Once pasta is cooked, stain the excess water.
- Place the cooked pasta in your Rubbermaid TakeAlongs® container.
- Drizzle with olive oil and add cucumber, greek yogurt, garlic, dill, lemon juice, salt, and pepper.
- Close the Rubbermaid TakeAlongs® container and shake to toss the pasta salad.
- Serve the pasta salad cold and enjoy!
