Mediterranean Power Bowls

Ingredients

  • 1/4 cup NatureSweet Cherubs Tomatoes, diced
  • 1/3 cup cooked brown rice
  • 1 cup spinach
  • 1/4 cup cucumber, diced
  • 1/2 shallot, sliced
  • 1/4 cup chickpeas
  • 1/4 feta cheese, crumbled
  • 1/2 avocado, sliced
  • fresh dill, for garnish
lemon vinaigrette
  • 1/2 lemon, juiced
  • 1/3 cup olive oil
  • 1 tsp dijon mustard
  • 1 tbsp honey
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  1. prepare your bowl. add spinach as your base and top with cooked brown rice.
  2. 2. prepare the lemon vinaigrette. in a small bowl, combine 1/3 cup olive oil, juice of 1/2 a lemon, 1 tsp dijon mustard, 1 tbsp honey, 1 tsp salt, and 1/2 tsp pepper. whisk to combine.
  3. 3. add your toppings: NatureSweet Cherubs Tomatoes, chickpeas, shallot, cucumber, feta cheese, avocado, and fresh dill.
  4. 4. serve with lemon vinaigrette and enjoy!
