Easy Asian Noodle Salad

- Prepare the linguine pasta. Boil until al dente being careful not to overcook. Once cooked, drain and the pasta water and toss in a little olive oil. Set aside to cool in the refridgerator.
- Prepare the dressing. In a bowl or leftover jar of PB, mix 2 tbsp of peanut butter with 1/3 cup coconut aminos, lime juice, 2 tsp rice wine vinegar, 1 tbsp sesame oil, ginger, garlic, and chili crisp.
- Assemble the salad. Add the cooked pasta to a large bowl with shredded chicken, cucumber, bell pepper, and coleslaw. Coat with the peanut dressing and toss to combine.
- Top with diced green onions, cilantro, and sesame seeds.
- Serve chilled and enjoy!
