Easy Asian Noodle Salad

  1. Prepare the linguine pasta. Boil until al dente being careful not to overcook. Once cooked, drain and the pasta water and toss in a little olive oil. Set aside to cool in the refridgerator.
  2. Prepare the dressing. In a bowl or leftover jar of PB, mix 2 tbsp of peanut butter with 1/3 cup coconut aminos, lime juice, 2 tsp rice wine vinegar, 1 tbsp sesame oil, ginger, garlic, and chili crisp.
  3. Assemble the salad. Add the cooked pasta to a large bowl with shredded chicken, cucumber, bell pepper, and coleslaw. Coat with the peanut dressing and toss to combine.
  4. Top with diced green onions, cilantro, and sesame seeds.
  5. Serve chilled and enjoy!
