Cheesy Beef & Bean Taquitos

  1. Preheat oven to 400 degrees.
  2. Prepare the ground beef. In a pan over medium heat, drizzle a little olive oil and add the beef. Season with salt and pepper and cook until brown and no longer pink. Drain any excess grease and season with siete taco seasoning and follow package instructions.
  3. Assemble the filling. In a large bowl combine the cooked ground beef, beans, drained rotel tomatoes, and 2 cups of cheese. Mix to combine and set aside.
  4. Spoon about 2-3 tablespoons into a tortilla and roll it up. Place it in a baking dish, seam side down, and repeat until you are out of filling.
  5. Spray the tortillas with olive oil and place the baking dish into the oven to bake for 15 minutes.
  6. After 15 minutes and the tortillas are slightly golden and crispy, remove from the oven and cover with a handful of shredded cheese.
  7. Place the baking dish back into the oven for another 10 minutes or until the cheese is melted and slightly crispy.
  8. Remove from the oven and serve warm with cilantro, guacamole and other toppings of choice.
  9. note: if you would like to prep these ahead of time, assemble the filling and roll it into tortillas. cover and store in the refrigerator until you’re ready to bake. before placing them in the oven, spray them with oil and follow the instructions from there! 🤍
