Garlic & Herb Tomato Galette

Ingredients
- 2 refrigerated pie crusts
- 4 heirloom tomatoes, sliced
- 1 cup baby heirloom tomatoes, sliced
- 1 shallot, sliced
- 2 5 oz garlic & herb cheese spreads
- 1/2 cup cheddar cheese
- 4 tbsp fresh basil
- salt, to taste
- pepper, to taste
- 1 egg, whisked
- 1 tsp olive oil
- Parchment paper
- 1 cup flour
Instructions
- Set out the pie crust to reach room temp.
- Preheat the oven to 400 degrees.
- Slice the heirloom tomatoes and place on top of a paper towel. Sprinkle salt on the tomatoes and cover with a paper towel. Set aside while you prep the cheese spread.
- Combine the garlic & herb cheese with cheddar cheese and 2 tbsp chopped basil. Set aside.
- Lay parchment paper on a baking sheet with a little flour and then lay out the pie dough.
- Add the cheese spread to the crust and top with tomatoes and shallots, leaving about a 1 inch border.
- Roll the edge of the pie over the tomatoes.
- Place in the oven to bake for 25-30 minutes.
- Once golden brown and cooked, drizzle with olive oil, season with a little salt, and garnish with fresh basil.
- Slice, serve warm, and enjoy!
