Salsa Chicken & Rice Bake

Ingredients
- 1 lb boneless skinless chicken thighs
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 white onion, diced
- 1 cup basmati rice, uncooked
- 1 cup chicken broth
- 1 cup salsa
- 2 tbsp olive oil
- 2 tsp cumin
- 1 tsp garlic powder
- 1 tsp paprika
- Salt, to taste
- Pepper, to taste
- Cilantro, optional for garnish
- Lime, optional
Instructions
- Preheat the oven to 400 degrees.
- Drizzle olive oil on the chicken thighs and season each side with salt and pepper.
- Drizzle a little olive oil in a hot skillet and sear each side of the chicken for 2-3 minutes. Once charred and partially cooked, set the chicken aside.
- Add uncooked rice to the skillet over medium heat and sauté for 1 minute.
- Add the onion and bell pepper. Saute for 2 or so minutes.
- Season with cumin, garlic powder, paprika, salt, and pepper.
- Pour in the salsa and chicken broth. Stir to combine.
- Add the chicken back to the skillet and place the skillet in the oven to bake for 30 minutes.
- Once it is finished cooking, remove from the oven and top with fresh cilantro and lime juice.
- Serve warm and enjoy!
