Nourishing Pastina Soup

- in a large pot over medium heat, drizzle olive oil and add butter to melt.
- add diced onion and garlic. season with salt and pepper. saute for 2-3 minutes.
- add diced carrots and celery. season with salt to taste. saute for another 2-3 minutes.
- pour in the bone broth and drop in the parmesan rind. bring to a boil. once boiling, reduce the heat to a simmer and cover for 15-20 minutes or until the veggies are tender.
- once the veggies are soft, use a slotted spoon and remove the diced veggies. add them to a blender and blend until smooth. (note: you can also use an immersion blender in your pot to blend).
- pour the blended veggies back into the pot and stir.
- bring to a boil and pour in the pastina. leave uncovered to cook and stir occasionally.
- add diced chicken and stir to combine. taste and season with more salt and pepper as needed.
- serve with fresh parm, parsley, and dill.
