Nourishing Pastina Soup

  1. in a large pot over medium heat, drizzle olive oil and add butter to melt.
  2. add diced onion and garlic. season with salt and pepper. saute for 2-3 minutes.
  3. add diced carrots and celery. season with salt to taste. saute for another 2-3 minutes.
  4. pour in the bone broth and drop in the parmesan rind. bring to a boil. once boiling, reduce the heat to a simmer and cover for 15-20 minutes or until the veggies are tender.
  5. once the veggies are soft, use a slotted spoon and remove the diced veggies. add them to a blender and blend until smooth. (note: you can also use an immersion blender in your pot to blend).
  6. pour the blended veggies back into the pot and stir.
  7. bring to a boil and pour in the pastina. leave uncovered to cook and stir occasionally.
  8. add diced chicken and stir to combine. taste and season with more salt and pepper as needed.
  9. serve with fresh parm, parsley, and dill.
