Trader Joe's Creamy Lemon Pasta

- Melt 1 tbsp butter in a small pan over medium heat, add panko bread crumbs. Stir occasionally and cook until toasted and fragrant.
- Prepare the Trader Joe’s chicken meatballs according to package instructions. I prefer the air fryer method.
- Bring a pot of salted water to a boil. Once boiling, add half the pack of trader joes trofie pasta. Cook for 8-9 minutes or until al dente. Before the pasta is finished cooking, save 1 cup of pasta water and set aside.
- Make the creamy lemon sauce. In a pot or large pan over medium heat, add 1 tbsp butter and melt. Pour in one cup of heavy cream. Add 1 tbsp lemon zest and the juice of one lemon. Pour in about 3/4 cup of reserved pasta water and season with salt and pepper. Stir to combine. Add fresh grated parmesan and stir to combine. Bring to a simmer.
- Once simmering, add the cooked pasta and stir to combine.
- Add fresh chopped spinach and stir until wilted and well combined.
- Add the cooked meatballs and garnish with fresh parmesan and toasted bread crumbs.
- Serve warm and enjoy!
