Ingredients
- 1 lb. boneless skinless chicken thighs
- 1/3 cup frank's red hot buffalo sauce
- 2 green onions, diced
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 jalapeño, diced
- Bibb lettuce or romaine lettuce
- 1 avocado
- 2 tbsp parsley
- blue cheese crumbles
- Tessemae's avocado ranch dressing
Instructions
Chicken
- marinate the chicken thighs in the buffalo sauce for at least 30 minutes. before cooking, season with salt and pepper.
- in a cast-iron skillet over medium-high heat, sear the chicken on each side for 3-4 minutes.
- cook until the internal temp is 165 degrees.
Salad
- assemble the salad. the key is to chop all the ingredients well including the lettuce.
- in a large bowl, combine the chicken, diced bell pepper, jalapeño, green onion, avocado, parsley, and cucumber.
- top with ranch dressing, blue cheese crumbles, and buffalo sauce!
