Truffled Kale Salad

Ingredients

  • 5 cups kale, chopped
  • 1/4 cup cherry tomatoes, halved
  • 3 tbsp. goat cheese
  • 2 tbsp. sunflower seeds
  • 1/2 cup quinoa, cook according to the package
  • 1/2 tbsp. olive oil
  • 1 tbsp. truffle oil
  • 1 tbsp. balsamic vinegar
  • avocado, sliced
  • salt, to taste

Instructions

  1. chop the kale very fine.
  2. massage the olive oil, truffle oil, and balsamic vinegar into the kale.
  3. add the cooked quinoa, avocado, goat cheese, sunflower seeds, and cherry tomatoes.
  4. season with salt. toss to combine.
  5. serve with or without a protein!
