Truffled Kale Salad

Ingredients
- 5 cups kale, chopped
- 1/4 cup cherry tomatoes, halved
- 3 tbsp. goat cheese
- 2 tbsp. sunflower seeds
- 1/2 cup quinoa, cook according to the package
- 1/2 tbsp. olive oil
- 1 tbsp. truffle oil
- 1 tbsp. balsamic vinegar
- avocado, sliced
- salt, to taste
Instructions
- chop the kale very fine.
- massage the olive oil, truffle oil, and balsamic vinegar into the kale.
- add the cooked quinoa, avocado, goat cheese, sunflower seeds, and cherry tomatoes.
- season with salt. toss to combine.
- serve with or without a protein!
