Creamy Caesar Salad

Ingredients

  • 5 cups kale
  • 1/2 red onion, diced
  • Tessemae's caesar dressing (amount to your liking)
  • freshly grated parmesan cheese
  • 1/2 cup sunflower seeds
  • 1 lb. boneless skinless chicken breast
  • fresh cracked pepper
  • kosher salt, to taste
  • 1/2 lemon, juice for garnish

Instructions

  1. prepare the chicken. 
  2. in a large pot over medium-high heat, add chicken. pour water over the chicken to cover and season with salt. 
  3. bring to a boil and then cover and cook for 10 minutes or until the chicken is cooked through and no longer pink. 
  4. once cooked, shred the chicken into bite-sized pieces.
  5. prepare the kale by chopping it very fine and add the caesar dressing. 
  6. once the dressing is added, massage it into the kale. don't skip this step!
  7. add your toppings! red onion, sunflower seeds, parmesan, pepper, and salt. toss to combine.
  8. squeeze fresh lemon over the top and enjoy!
