Fall Butter Apple Salad
Ingredients
Honey Dijon Vinaigrette
Instructions
- Prepare the breadcrumbs. In a small pan over medium heat, melt 2 tbsp butter. Add 1/2 cup of breadcrumbs and stir occasionally until breadcrumbs are golden brown and fragrant. About 3-5 minutes.
- Prepare the honey dijon dressing. In bowl, combine 1/3 cup olive oil, 3 tbsp white wine vinegar, 2 tsp dijon mustard, 1 tbsp honey, lemon juice, garlic, 1/2 tsp parsley, 1/2 rosemary, 1/4 tsp thyme, salt and pepper.
- Prepare the salad. On a small platter or plate, lay the lettuce flat and top with apples, shallots, prosciutto, avocado, feta, and toasted breadcrumbs. Season with fresh cracked pepper.
- Serve immediately and enjoy!
