Roasted Corn Quinoa Salad

- Prepare one cup of quinoa according to package instructions.
- Prepare the dressing. Combine 1/4 cup olive oil, lime juice, 2 tbsp rice vinegar, 1 tbsp honey, garlic, 1 tsp cumin, salt, and pepper.
- Once the quinoa is cooked and has cooled a bit, add it to a large bowl.
- In the large bowl of quinoa, add bell pepper, red onion, corn, mint, basil, sunflower seeds, and feta cheese. season with salt and pepper and toss to combine.
- Serve immediately or serve chilled and enjoy! Note: it’s great topped with avocado and grilled chicken.
