Roasted Corn Quinoa Salad

Ingredients

Instructions

  1. Prepare one cup of quinoa according to package instructions.
  2. Prepare the dressing. Combine 1/4 cup olive oil, lime juice, 2 tbsp rice vinegar, 1 tbsp honey, garlic, 1 tsp cumin, salt, and pepper.
  3. Once the quinoa is cooked and has cooled a bit, add it to a large bowl.
  4. In the large bowl of quinoa, add bell pepper, red onion, corn, mint, basil, sunflower seeds, and feta cheese. season with salt and pepper and toss to combine.
  5. Serve immediately or serve chilled and enjoy! Note: it’s great topped with avocado and grilled chicken.
