Greek Chicken & Tabbouleh Salad

Ingredients
- 1 large bunch of parsley
- 1/4 cup white onion, diced
- 3 roma tomatoes, diced
- 3 tbs. olive oil
- salt, to taste
- 1/3 cup quinoa
- 5 lb. boneless skinless chicken thighs
- 1 lemon
- 1/2 tsp. dried oregano
Marinade
- 1 lemon
- 1/4 cup olive oil
- 1 tsp. salt
- 1 tsp. pepper
- 1 tsp. dried rosemary
- 2 garlic cloves, minced
Instructions
- marinate the chicken for at least one hour.
- cook on a skillet or grill on medium-high heat. we cooked the chicken for about 6-8 minutes on each side (the internal temperature needs to be 165).
- for the salad, prep the quinoa according to the package and prep your other ingredients.
- chop the parsley very fine and add the tomatoes, onion, salt, juice of one lemon, 3 tbs of olive oil.
- once the quinoa is cooked, add it to the salad. toss to combine.
- serve with chicken on top or on the side.
