Arugula Quinoa Salad

Ingredients

  • 5 cups arugula
  • 1/4 cup cotija cheese
  • 1/3 red onion, diced
  • 1/2 cup quinoa
  • 1 avocado
  • 2 ears of corn, husked
  • 3 tbsp olive oil
  • 3 green onions, diced
  • 1/4 cup cherry tomatoes, diced
  • 1 lime
  • salt, to taste

Instructions

  1. cook the quinoa according to package
  2. husk the corn off the cob and dice the red onion. 
  3. in a small pot over medium heat, add 1 tbsp olive oil and the corn and red onion. 
  4. sauté for 2-3 minutes and season with salt.
  5. in a large bowl, add the arugula, quinoa, red onion and corn mixture, cherry tomatoes, cotija, and green onions. 
  6. drizzle 1-2 tbsp olive oil and juice of 1 lime. season with salt and toss to combine. 
  7. add avocado and top with more fresh cotija cheese.
