Arugula Quinoa Salad

Ingredients
- 5 cups arugula
- 1/4 cup cotija cheese
- 1/3 red onion, diced
- 1/2 cup quinoa
- 1 avocado
- 2 ears of corn, husked
- 3 tbsp olive oil
- 3 green onions, diced
- 1/4 cup cherry tomatoes, diced
- 1 lime
- salt, to taste
Instructions
- cook the quinoa according to package
- husk the corn off the cob and dice the red onion.
- in a small pot over medium heat, add 1 tbsp olive oil and the corn and red onion.
- sauté for 2-3 minutes and season with salt.
- in a large bowl, add the arugula, quinoa, red onion and corn mixture, cherry tomatoes, cotija, and green onions.
- drizzle 1-2 tbsp olive oil and juice of 1 lime. season with salt and toss to combine.
- add avocado and top with more fresh cotija cheese.
