Tortellini Soup

Tortellini Soup
Ingredients
- 1 lb. ground chicken sausage or ground pork sausage
- 2-3 cups cheese tortellinis
- 4-6 cups chicken broth or chicken bone broth
- 3/4 cup heavy cream, coconut milk, or original nut pod oat creamer
- 14.5 oz. can diced tomatoes
- 1 cup baby spinach
- 4 garlic cloves, minced
- 1 small white onion, diced
- 2 tbsp olive oil
- red pepper flakes, to taste (optional)
- salt, to taste
- pepper, to taste
Instructions
- in a large pot or dutch oven over medium-high heat, add the ground sausage and cook until brown and no longer pink. drain and return to the pot/dutch oven.
- drizzle a little olive oil and add onion and garlic. sauté for about 2 minutes.
- season with salt, pepper, red pepper flakes.
- add the can of diced tomatoes and stir to combine.
- add the chicken broth and cream of choice. stir to combine, turn the heat to low, and bring to a simmer.
- add tortellinis, spinach, and red pepper flakes, cook for about 5 more minutes on low-medium heat
- serve and enjoy!
