Tortellini Soup

Ingredients

  • 1 lb. ground chicken sausage or ground pork sausage
  • 2-3 cups cheese tortellinis
  • 4-6 cups chicken broth or chicken bone broth
  • 3/4 cup heavy cream, coconut milk, or original nut pod oat creamer
  • 14.5 oz. can diced tomatoes
  • 1 cup baby spinach
  • 4 garlic cloves, minced
  • 1 small white onion, diced
  • 2 tbsp olive oil
  • red pepper flakes, to taste (optional)
  • salt, to taste
  • pepper, to taste

Instructions

  1. in a large pot or dutch oven over medium-high heat, add the ground sausage and cook until brown and no longer pink. drain and return to the pot/dutch oven.
  2. drizzle a little olive oil and add onion and garlic. sauté for about 2 minutes.
  3. season with salt, pepper, red pepper flakes.
  4. add the can of diced tomatoes and stir to combine.
  5. add the chicken broth and cream of choice. stir to combine, turn the heat to low, and bring to a simmer.
  6. add tortellinis, spinach, and red pepper flakes, cook for about 5 more minutes on low-medium heat
  7. serve and enjoy!
