Thai Street Noodle Soup

Ingredients

  • 1 lb. boneless skinless chicken breast, chopped in cubes
  • 1 qt chicken broth
  • 1 cup rice noodles
  • 1/2 white onion, finely diced
  • 3 garlic cloves, minced
  • 2 limes
  • 2 tbs red curry paste
  • 5 oz can of unsweetened coconut milk
  • 1 bell pepper
  • 1 tsp ground ginger or 1/2 inch of fresh ginger
  • 1 jalapeño (optional)
  • veggies of your choice! (I used broccoli and mushrooms)
  • red pepper flakes, for spice
  • salt, to taste
  • cilantro, for garnish
  • green onion, for garnish (optional)

Instructions

  1. in a medium-high heat dutch oven or pot, cook your chicken with 1-2 tbs oil of your choice. 
  2. cook on each side for about 4 minutes or until browned and cooked through. once cooked set aside.
  3. in the same pot you cooked the chicken, add onion, garlic, and bell pepper. saute for 2-3 minutes
  4. add 2 tbs red curry paste. stir to combine. 
  5. add the can of coconut milk and red pepper flakes and ginger. bring to a simmer.
  6. add the chicken broth, stir to combine.
  7. add veggies and chicken. bring to a simmer.
  8. lastly add the noodles. cook for about 5 minutes.
  9. top with fresh lime juice, cilantro, green onion, and jalapeño.
