Larb Salad

Ingredients
- 1 lb. ground turkey
- 1 shallot, finely chopped
- 1 tbsp sambal oelek or sriracha
- 1/4 cup coconut aminos
- 3 tbsp rice vinegar
- 3 garlic cloves, minced
- 4 green onions, diced
- 1 tbsp chopped fresh mint
- 2 tsp toasted sesame oil
- red pepper flakes, to taste (optional)
- cucumber, for garnish (optional)
- white rice or cauliflower rice, for serving
- romaine lettuce, for serving
- fresh cilantro, for garnish
- salt, to taste
Instructions
- in a large bowl, combine turkey, shallot, garlic, sambal oelek, coconut aminos, rice vinegar, green onions, mint, salt, and red pepper flakes.
- mix to combine and set aside to marinate for at least 30 minutes.
- in a large pan, heat sesame oil over medium-high heat. Once hot, add meat mixture and begin to break apart into small pieces. cook for about 10 minutes or until the meat is cooked
- through and no longer pink. do not drain and serve immediately.
- serve over rice and a bed of romaine lettuce with sliced cucumber, fresh mint, cilantro, and green onion for garnish.
