TABBOULEH SALAD

Ingredients

  • 2 large bunches of curly parsley, finely chopped
  • 1 white onion, diced
  • 3 roma tomatoes, diced
  • 1/2 cup cooked quinoa
  • 3 tbsp olive oil
  • 1 lemon
  • salt, to taste

Instructions

  1. finely chop the parsley and place in a large bowl.
  2. add the diced onion and tomatoes. season with salt and stir to combine.
  3. add cooked quinoa and drizzle 3 tbsp olive oil and the juice of 1 lemon. stir to combine and place in the refrigerator to cool for at least 30 minutes.
  4. serve cold and enjoy!
