TABBOULEH SALAD
Ingredients
- 2 large bunches of curly parsley, finely chopped
- 1 white onion, diced
- 3 roma tomatoes, diced
- 1/2 cup cooked quinoa
- 3 tbsp olive oil
- 1 lemon
- salt, to taste
Instructions
- finely chop the parsley and place in a large bowl.
- add the diced onion and tomatoes. season with salt and stir to combine.
- add cooked quinoa and drizzle 3 tbsp olive oil and the juice of 1 lemon. stir to combine and place in the refrigerator to cool for at least 30 minutes.
- serve cold and enjoy!
