Ingredients
- 2 lbs ground turkey
- 15 oz. can black beans, drained and rinsed
- 1 cup frozen or fresh corn
- 4 cups chicken broth
- 9 oz. kettle and fire chicken bone broth
- 1 red onion, diced
- 2 cans of rotel tomatoes (about 20 oz. total)
- siete taco seasoning pack
- 1 tbsp cumin
- salt, to taste
- 1 tbsp olive oil
- red pepper flakes, to taste (optional)
- cilantro (optional)
- lime (optional)
- sour cream (optional)
- jalapeno (optional)
Instructions
- in a large dutch oven/pot over medium-high heat, brown the ground turkey. once it is cooked, drain and set it aside.
- in the same pot, add olive oil and red onion. sauté for 1-2 minutes and bring the turkey back to the pot. stir to combine and add rotel tomatoes, corn, and black beans. sauté for 2-3 minutes.
- season with salt, cumin, red pepper flakes, and siete taco seasoning. stir to combine and add chicken broth. turn heat to low, cover and bring to a simmer for 15 minutes.
- turn the heat off and add the bone broth. stir to combine.
- serve with cilantro, sour cream, lime, cheese, and jalapeños!
