Taco Soup

Ingredients

  • 2 lbs ground turkey
  • 15 oz. can black beans, drained and rinsed
  • 1 cup frozen or fresh corn
  • 4 cups chicken broth
  • 9 oz. kettle and fire chicken bone broth
  • 1 red onion, diced
  • 2 cans of rotel tomatoes (about 20 oz. total)
  • siete taco seasoning pack
  • 1 tbsp cumin
  • salt, to taste
  • 1 tbsp olive oil
  • red pepper flakes, to taste (optional)
  • cilantro (optional)
  • lime (optional)
  • sour cream (optional)
  • jalapeno (optional)

Instructions

  1. in a large dutch oven/pot over medium-high heat, brown the ground turkey. once it is cooked, drain and set it aside.
  2. in the same pot, add olive oil and red onion. sauté for 1-2 minutes and bring the turkey back to the pot. stir to combine and add rotel tomatoes, corn, and black beans. sauté for 2-3 minutes.
  3. season with salt, cumin, red pepper flakes, and siete taco seasoning. stir to combine and add chicken broth. turn heat to low, cover and bring to a simmer for 15 minutes.
  4. turn the heat off and add the bone broth. stir to combine.
  5. serve with cilantro, sour cream, lime, cheese, and jalapeños!
