Nutrient-Dense Chicken Noodle Soup

Ingredients

  • 1/2 yellow onion
  • 2 carrots
  • 2 stalks of celery
  • 4 cloves garlic, minced
  • 14 oz jar of bone broth (I used EPIC Artisanal brand)
  • 5 cups of chicken broth
  • 5 lb. boneless skinless chicken broth
  • 1 box of Banza pasta
  • 2 tbs. fresh parsley, chopped
  • 3 tbs. fresh dill, chopped
  • 1 lemon, juiced
  • 2 cups baby spinach
  • salt, to taste
  • pepper, to taste

Instructions

  1. in a large pot or dutch oven, pour in the chicken broth and place the chicken breast inside. turn heat to low. cover and cook for 20 minutes.
  2. while the chicken boils, prep your ingredients and cook the Banza pasta according to the package.
  3. after 20 minutes is up, take the chicken out and set aside. 
  4. chop the chicken in small bite sized pieces (you can shred it if you like it that way).
  5. place chicken back into the pot and add the bone broth, garlic, onion, carrots, celery, lemon juice, salt, and pepper. stir to combine. turn heat to medium-low and cover for 5 minutes.
  6. after the time is up, add the Banza, dill, parsley, and spinach.
  7. cook for 1-2 minutes and serve immediately
