Nutrient-Dense Chicken Noodle Soup

Ingredients
- 1/2 yellow onion
- 2 carrots
- 2 stalks of celery
- 4 cloves garlic, minced
- 14 oz jar of bone broth (I used EPIC Artisanal brand)
- 5 cups of chicken broth
- 5 lb. boneless skinless chicken broth
- 1 box of Banza pasta
- 2 tbs. fresh parsley, chopped
- 3 tbs. fresh dill, chopped
- 1 lemon, juiced
- 2 cups baby spinach
- salt, to taste
- pepper, to taste
Instructions
- in a large pot or dutch oven, pour in the chicken broth and place the chicken breast inside. turn heat to low. cover and cook for 20 minutes.
- while the chicken boils, prep your ingredients and cook the Banza pasta according to the package.
- after 20 minutes is up, take the chicken out and set aside.
- chop the chicken in small bite sized pieces (you can shred it if you like it that way).
- place chicken back into the pot and add the bone broth, garlic, onion, carrots, celery, lemon juice, salt, and pepper. stir to combine. turn heat to medium-low and cover for 5 minutes.
- after the time is up, add the Banza, dill, parsley, and spinach.
- cook for 1-2 minutes and serve immediately
