Veggie Wonton Soup

Ingredients
- 1 red bell pepper, diced
- 1 jalapeno, diced
- 3 garlic cloves, minced
- 1 carrot, diced
- 1 inch of fresh ginger, grated
- 4 cups of chicken broth or veggie broth
- 1 lime
- red pepper flakes, to taste
- 2 tbs. green curry paste
- 2 tbs. sesame oil
- 1 cup broccoli
- baby spinach (optional)
- frozen vegetable gyoza (mine were from Trader Joe's)
Instructions
- in a large pot, heat 2 tbs. sesame oil then add the diced bell pepper, carrot, and jalapeño. sauté for 2 minutes
- add garlic, ginger, and green curry paste. sauté for 1 minute (if it gets dry add a little more sesame oil).
- season with red pepper flakes, salt, and pepper. sauté for 1 minute.
- bring the heat to low-medium and add broth and zest of 1 lime.
- bring heat to low and wait for a simmer.
- once simmering add the gyoza, broccoli, and juice from one lime. stir to combine.
- let simmer for 2-3 minutes.
- pour over fresh spinach in a bowl and enjoy!
