Veggie Wonton Soup

Ingredients

  • 1 red bell pepper, diced
  • 1 jalapeno, diced
  • 3 garlic cloves, minced
  • 1 carrot, diced
  • 1 inch of fresh ginger, grated
  • 4 cups of chicken broth or veggie broth
  • 1 lime
  • red pepper flakes, to taste
  • 2 tbs. green curry paste
  • 2 tbs. sesame oil
  • 1 cup broccoli
  • baby spinach (optional)
  • frozen vegetable gyoza (mine were from Trader Joe's)

Instructions

  1. in a large pot, heat 2 tbs. sesame oil then add the diced bell pepper, carrot, and jalapeño. sauté for 2 minutes
  2. add garlic, ginger, and green curry paste. sauté for 1 minute (if it gets dry add a little more sesame oil).
  3. season with red pepper flakes, salt, and pepper. sauté for 1 minute.
  4. bring the heat to low-medium and add broth and zest of 1 lime.
  5. bring heat to low and wait for a simmer.
  6. once simmering add the gyoza, broccoli, and juice from one lime. stir to combine.
  7. let simmer for 2-3 minutes.
  8. pour over fresh spinach in a bowl and enjoy!
