Dill Smashed Potatoes

Ingredients
- 24 oz. baby potatoes
- 1/4 cup olive oil
- 1 tbsp fresh minced dill
- 2 garlic cloves, minced
- salt, to taste
- pepper, to taste
Instructions
- preheat oven to 400 degrees.
- bring a large pot of water to a boil and add the potatoes. boil for 15 minutes or until you can poke a fork through them.
- drain the potatoes and lay them on a baking sheet. take the bottom of a cup to smash each potato.
- in a small bowl, combine olive oil, garlic, dill, salt, and pepper. stir to combine and brush the olive oil mixture on each potato. place in the oven to bake for 20 minutes. (flip/toss at 10 minutes)
- remove from the oven and top with fresh dill and enjoy!
