Mexican Skillet Corn

Ingredients

  • 4 ears of corn, husked
  • 1 bell pepper, diced
  • 1 jalapeno, diced
  • 1/2 red onion, diced
  • 1 lime
  • 1 tbsp olive oil
  • 1/4 cup cilantro
  • 1 tbsp cumin
  • salt, to taste
  • 2 tbsp cotija cheese

Instructions

  1. in a large skillet over medium-high heat, add 1 tbsp olive oil and add the diced bell pepper, onion, and jalapeño. season with salt and saute for 2-3 minutes.
  2. add the corn and cumin. stir to combine and saute for another 2-3 minutes.
  3. add the chopped cilantro and juice of 1/2 lime. stir to combine. top with cotija cheese and serve warm.
  4. garnish with more cilantro and fresh lime juice.
