Mexican Skillet Corn
Ingredients
- 4 ears of corn, husked
- 1 bell pepper, diced
- 1 jalapeno, diced
- 1/2 red onion, diced
- 1 lime
- 1 tbsp olive oil
- 1/4 cup cilantro
- 1 tbsp cumin
- salt, to taste
- 2 tbsp cotija cheese
Instructions
- in a large skillet over medium-high heat, add 1 tbsp olive oil and add the diced bell pepper, onion, and jalapeño. season with salt and saute for 2-3 minutes.
- add the corn and cumin. stir to combine and saute for another 2-3 minutes.
- add the chopped cilantro and juice of 1/2 lime. stir to combine. top with cotija cheese and serve warm.
- garnish with more cilantro and fresh lime juice.
