Parmesan Truffle Fries

Ingredients

  • 2 russet potatoes
  • 2 tbsp truffle oil
  • kosher salt, to taste
  • 4 tbsp olive oil
  • salt, to taste
  • fresh shaved parmesan cheese
  • fresh parsley, minced

Instructions

  1. cut the potatoes in thin fry-like shapes. place in a large bowl and cover them with water. let them soak for at least 30 minutes. this will make them crispy.
  2. once they are finished soaking, drain them and pat them dry. place them in a large bowl, drizzle olive oil, salt and pepper. toss to combine.
  3. place in the air fryer and cook on 400 degrees for 18 minutes. be sure to flip/toss them at the 9 minute mark.
  4. once they are finished cooking, place them in a large bowl and drizzle truffle oil and season with kosher salt. toss to combine.
  5. serve with fresh parmesan and parsley
  6. dig in!
