Trader Joe's Cornflake Chicken
Instructions
- Preheat the oven to 400 degrees.
- Add the cornflakes to a large zip lock or food processor. Crush well to make the breading.
- Pour the crushed corn flakes in a bowl and add 2 tbsp ranch seasoning and a pinch of salt. Mix well to combine.
- In another bowl whisk two eggs with 2 tbsp of milk.
- Place a wire rack on top of a baking sheet. If you don’t have a wire rack, that’s okay! Just flip the chicken halfway when baking.
- Dip the chicken tenderloins in the egg wash then place in the ranch corn flake mixture to coat. Once the chicken is coated, place it on the wire rack.
- Once every piece of chicken is breaded and on the rack, spray each with avocado oil.
- Place in the oven to bake for 20 minutes.
- Once cooked and the internal temperature is 165 degrees, remove from the oven and serve warm with the sweet mustard sauce for dipping!
