Trader Joe's Cornflake Chicken

Ingredients

Instructions

  1. Preheat the oven to 400 degrees.
  2. Add the cornflakes to a large zip lock or food processor. Crush well to make the breading.
  3. Pour the crushed corn flakes in a bowl and add 2 tbsp ranch seasoning and a pinch of salt. Mix well to combine.
  4. In another bowl whisk two eggs with 2 tbsp of milk.
  5. Place a wire rack on top of a baking sheet. If you don’t have a wire rack, that’s okay! Just flip the chicken halfway when baking.
  6. Dip the chicken tenderloins in the egg wash then place in the ranch corn flake mixture to coat. Once the chicken is coated, place it on the wire rack.
  7. Once every piece of chicken is breaded and on the rack, spray each with avocado oil.
  8. Place in the oven to bake for 20 minutes.
  9. Once cooked and the internal temperature is 165 degrees, remove from the oven and serve warm with the sweet mustard sauce for dipping!
