Asian Steak Stir Fry Bowls

Ingredients

  • 1 lb. flank steak
  • 1/4 cup coconut aminos
  • 2 tbsp kettle & fire beef broth
  • 1/2 tsp sesame oil
  • 1 inch ginger, grated
  • 2 garlic cloves, minced
  • 1 tbsp hot honey
  • 2 tsp lime zest
  • juice of 1 lime
  • 1 tsp white pepper
  • 1/4 cup tapioca flour
  • 2-3 tbsp avocado oil
  • sesame seeds, for garnish
cucumber salad
  • 4 persian cucumbers, sliced
  • salt, to taste
  • 1 tsp ginger, grated
  • 1 garlic clove, minced
  • 1/4 cup rice vinegar
  • 1 tbsp honey
  • 1 tbsp coconut aminos
  • 1 tsp toasted sesame oil
  • 2 tsp sesame seeds
  • red pepper flakes, to taste
additional ingredients
  • butter lettuce
  • white rice
  • avocado
  • cilantro

Instructions

  1. prepare the cucumber salad. add sliced cucumbers to a large bowl and sprinkle salt over the top. let them sit for 30 minutes to draw excess water out of the cucumbers. after you have let them sit, drain the water and pat the cucumbers dry.
  2. while you wait on the cucumbers, prepare the sauce. in a bowl combine, 1 tsp ginger, minced garlic, 1/4 cup rice vinegar, 1 tbsp honey, 1 tbsp coconut aminos, and 1 tsp sesame oil. whisk to combine.
  3. add the semi dry cucumbers to a bowl and pour the sauce over them. add red pepper flakes and sesame seeds. stir to combine and place the cucumbers in the refrigerator to marinate while you prepare the steak.
  4. prepare the stir fry sauce. combine 1/4 cup coconut aminos, 2 tbsp kettle & fire beef broth, 1/2 tsp sesame oil, 1 inch ginger, 2 garlic cloves, 1 tbsp hot honey, 2 tsp lime zest, and juice of 1 lime. stir and set aside.
  5. lay the steak flat and beat with a meat mallet. once the meat is even and flat, slice into small bite size pieces and set aside.
  6. drizzle about 1-2 tbsp avocado oil over the sliced beef. season with white pepper and add tapioca flour. toss to combine.
  7. in a wok or large frying pan over medium heat, add 1 tbsp avocado oil. next add the sliced beef. sear on each side for 2-3 minutes. once cooked, set aside.
  8. drain the excess grease from the pan and turn the heat to medium-low. pour the sauce mixture in the pan and bring to a simmer, stirring occasionally.
  9. once the sauce is simmering, add the beef to the sauce. stir to combine.
  10. once the beef is fully coated in the sauce, turn the heat off and garnish with sesame seeds.
  11. prepare your bowls. add cooked white rice as your base and top with lettuce, steak, cucumber salad (be sure to add some of the sauce from the salad, too), avocado, and cilantro.
  12. garnish with sesame seeds and enjoy!
