Pan Fried U.S. Farm Raised Catfish With Lemon Arugula Garnish

Ingredients

  • 2-4 Large U.S Farm-Raised Catfish Filets
  • 2 eggs, beaten
  • 1 cup flour
  • 2-3 tbsp olive oil
  • 1 cup panko breadcrumbs
  • 2 tbsp Italian seasoning
  • Salt, to taste
  • Pepper, to taste
  • 2 cup arugula
  • Lemon wedge to serve
  • Fresh grated parmesan cheese, for garnish

Instructions

  1. Prepare your assembly line. In one bowl, whisk two eggs well. In another bowl, combine panko breadcrumbs and Italian seasoning. In another bowl, add flour.
  2. 2. Lay the U.S. Farm-Raised Catfish filets flat and season with salt and pepper.
  3. 3. After the filets are seasoned, dredge the fish in flour coating each side. Next, place the fish in the egg and cover each side. Lastly, dredge the fish in the breadcrumb mixture. Do this with each filet.
  4. 4. In a skillet over high heat, add 2-3 tbsp olive oil. Once the skillet is smoking and hot, place the breaded fish down to fry. Cook on each side for about 3 minutes.
  5. 5. Top the fish with arugula tossed in olive oil and lemon juice.
  6. 6. Serve with fresh grated parmesan cheese and enjoy!
