Tzatziki Chicken Dinner

Ingredients
- 1 lb boneless skinless chicken thighs
- 1 green bell pepper
- 2 cups fingerling potatoes
- 1/2 red onion
- 2 tsp garlic powder
- salt & pepper, to taste
- 1 tsp onion powder
- 2 tsp dried oregano
- 1 tsp red pepper flakes
- 2-3 tbsp olive oil
- fresh dill, for garnish
- brown rice, for serving (optional)
Tzatziki Sauce
- 1 cup greek yogurt
- 2 persian cucumbers, diced
- 2 garlic cloves, minced
- 2 tbsp fresh dill, chopped
- 1/2 lemon, juiced
- 1/2 tsp dried oregano
- salt, to taste
- pepper, to taste
Instructions
- Preheat oven to 400 degrees
- On a large sheet pan, add bell pepper, onion, potatoes, and chicken thighs
- Prepare your seasoning. In a small bowl combine, salt, pepper, 2 tsp garlic powder, 1 tsp onion powder, 2 tsp oregano, and 1 tsp red pepper flakes.
- Drizzle olive oil over the sheet pan ingredients and season with your seasoning mixture.
- Top with fresh dill and place in the oven to bake for 20 minutes.
- While the sheet pan ingredients bake, prepare the tzatziki sauce. Combine 1 cup greek yogurt, diced cucumber, dill, garlic, lemon juice, 1/2 tsp oregano, salt, and pepper. stir to combine.
- Once the sheet pan ingredients are finished cooking, serve over brown rice, top with fresh dill and tzatziki sauce.
