Build Your Own Gyros

Ingredients

Greek Chicken
  • 1 lb boneless skinless chicken thighs
  • 1 tbsp avocado oil
  • salt, to taste
  • 1/2 tsp black pepper
  • 1/2 tsp dried rosemary
  • 1/2 tsp dried oregano
  • 1/4 tsp dried thyme
  • 1 tsp garlic powder
Tzatziki Sauce
  • 1 cup greek yogurt
  • 2 persian cucumbers, diced
  • 2 garlic cloves, minced
  • 2 tbsp fresh dill, chopped
  • 1/2 lemon, juiced
  • 1/2 tsp dried oregano
  • salt, to taste
  • pepper, to taste
Additional Ingredients
  • cherry tomatoes, diced
  • bibb lettuce or spinach
  • feta cheese
  • fresh dill
  • naan bread or pita bread

Instructions

  1. prepare the greek seasoning. in a small bowl, combine salt, pepper, 1/2 tsp dried rosemary, 1/2 tsp dried oregano, 1/4 tsp dried thyme, and 1 tsp garlic powder.
  2. prepare the chicken. lay the chicken flat and beat with a meat mallet to make the chicken even and thin. drizzle avocado oil on each side of the chicken and season with your greek seasoning mixture.
  3. in a large skillet over medium-high heat, drizzle avocado oil and sear the chicken on each side for 4-5 minutes or until the chicken is golden brown and crispy. the internal temperature of the chicken should be 165 degrees.
  4. prepare the tzatziki sauce. in a bowl, combine 1 cup greek yogurt, diced cucumber, dill, garlic, lemon juice, 1/2 tsp oregano, salt, and pepper. stir to combine.
  5. build your gyro! lay a piece of naan bread or pita flat. add tzatziki sauce, sliced chicken, lettuce, feta, cherry tomatoes, and dill.
