Ingredients
Greek Chicken
- 1 lb boneless skinless chicken thighs
- 1 tbsp avocado oil
- salt, to taste
- 1/2 tsp black pepper
- 1/2 tsp dried rosemary
- 1/2 tsp dried oregano
- 1/4 tsp dried thyme
- 1 tsp garlic powder
Tzatziki Sauce
- 1 cup greek yogurt
- 2 persian cucumbers, diced
- 2 garlic cloves, minced
- 2 tbsp fresh dill, chopped
- 1/2 lemon, juiced
- 1/2 tsp dried oregano
- salt, to taste
- pepper, to taste
Additional Ingredients
- cherry tomatoes, diced
- bibb lettuce or spinach
- feta cheese
- fresh dill
- naan bread or pita bread
Instructions
- prepare the greek seasoning. in a small bowl, combine salt, pepper, 1/2 tsp dried rosemary, 1/2 tsp dried oregano, 1/4 tsp dried thyme, and 1 tsp garlic powder.
- prepare the chicken. lay the chicken flat and beat with a meat mallet to make the chicken even and thin. drizzle avocado oil on each side of the chicken and season with your greek seasoning mixture.
- in a large skillet over medium-high heat, drizzle avocado oil and sear the chicken on each side for 4-5 minutes or until the chicken is golden brown and crispy. the internal temperature of the chicken should be 165 degrees.
- prepare the tzatziki sauce. in a bowl, combine 1 cup greek yogurt, diced cucumber, dill, garlic, lemon juice, 1/2 tsp oregano, salt, and pepper. stir to combine.
- build your gyro! lay a piece of naan bread or pita flat. add tzatziki sauce, sliced chicken, lettuce, feta, cherry tomatoes, and dill.
