Crunchy Chicken Tacos

Ingredients

  • 1 lb boneless skinless chicken breast
  • 1 tbsp avocado oil
  • 1/2 cup salsa
  • 1/2 cup kettle & fire chicken broth
  • 2 tbsp taco seasoning
  • 6-8 hard grain-free taco shells
  • 6-8 soft grain-free tortillas
  • 1 cup shredded mexican cheese
  • lettuce, for garnish
  • red onion, for garnish
  • avocado, for garnish

Instructions

  1. preheat the oven to 350 degrees.
  2. heat avocado oil in a dutch oven over medium-high heat and sear the chicken breast on each side for 2-3 minutes.
  3. add 1/2 cup salsa, 1/2 cup kettle & fire chicken broth, and 2 tbsp taco seasoning. turn the heat to low and cover to cook for about 20 minutes. once finished cooking, shred the chicken using a fork and knife. stir in the excess sauce, turn the heat off, and set aside.
  4. lay the soft tortillas on a baking sheet and cover the tortillas with shredded cheese. add the hard shell tacos. place in the oven to bake for 2-3 minutes.
  5. once the cheese is melted, remove the baking sheet from the oven. fold the soft tortilla around the hard taco shell. the melted cheese should make the soft tortilla stick to the hard taco shell.
  6. assemble the tacos by placing the shredded chicken in the cheesy taco shell. add lettuce, onion, and avocado.
  7. serve warm and enjoy!
