Sticky Beef Lettuce Wraps

Ingredients
- 1 lb flank steak
- butter lettuce
- 1/4 cup coconut aminos
- 2 tbsp kettle & fire beef broth
- 1/2 tsp sesame oil
- 1 inch ginger, grated
- 2 garlic cloves, minced
- 1 tbsp hot honey
- 2 tsp lime zest
- juice of 1 lime
- 1 tsp white pepper
- 1/4 cup tapioca flour
- 2-3 tbsp avocado oil
- sesame seeds, for garnish
- green onion, for garnish
- pineapple/mango salsa, for garnish (purchased at Whole Foods)
Instructions
- prepare the sauce. combine 1/4 cup coconut aminos, 2 tbsp kettle & fire beef broth, 1/2 tsp sesame oil, 1 inch ginger, 2 garlic cloves, 1 tbsp hot honey, 2 tsp lime zest, and juice of 1 lime. stir and set aside.
- lay the steak flat and beat with a meat mallet. once the meat is even and flat, slice into small bite size pieces and set aside.
- drizzle about 1-2 tbsp avocado oil over the sliced beef. season with white pepper and add tapioca flour. toss to combine.
- in a wok or large frying pan over medium heat, add 1 tbsp avocado oil. next add the sliced beef. sear on each side for 2-3 minutes. once cooked, set aside.
- drain the excess grease from the pan and turn the heat to medium-low.pour the sauce mixture in the pan and bring to a simmer, stirring occasionally. bring to a simmer.
- once the sauce is simmering, add the beef to the sauce. stir to combine.
- once the beef is fully coated in the sauce, turn the heat off and garnish with sesame seeds.
- assemble the lettuce wraps. place the beef in the lettuce cup and top with pineapple salsa and green onions.
