Sticky Beef Lettuce Wraps

Ingredients

  • 1 lb flank steak
  • butter lettuce
  • 1/4 cup coconut aminos
  • 2 tbsp kettle & fire beef broth
  • 1/2 tsp sesame oil
  • 1 inch ginger, grated
  • 2 garlic cloves, minced
  • 1 tbsp hot honey
  • 2 tsp lime zest
  • juice of 1 lime
  • 1 tsp white pepper
  • 1/4 cup tapioca flour
  • 2-3 tbsp avocado oil
  • sesame seeds, for garnish
  • green onion, for garnish
  • pineapple/mango salsa, for garnish (purchased at Whole Foods)

Instructions

  1. prepare the sauce. combine 1/4 cup coconut aminos, 2 tbsp kettle & fire beef broth, 1/2 tsp sesame oil, 1 inch ginger, 2 garlic cloves, 1 tbsp hot honey, 2 tsp lime zest, and juice of 1 lime. stir and set aside.
  2. lay the steak flat and beat with a meat mallet. once the meat is even and flat, slice into small bite size pieces and set aside.
  3. drizzle about 1-2 tbsp avocado oil over the sliced beef. season with white pepper and add tapioca flour. toss to combine.
  4. in a wok or large frying pan over medium heat, add 1 tbsp avocado oil. next add the sliced beef. sear on each side for 2-3 minutes. once cooked, set aside.
  5. drain the excess grease from the pan and turn the heat to medium-low.pour the sauce mixture in the pan and bring to a simmer, stirring occasionally. bring to a simmer.
  6. once the sauce is simmering, add the beef to the sauce. stir to combine.
  7. once the beef is fully coated in the sauce, turn the heat off and garnish with sesame seeds.
  8. assemble the lettuce wraps. place the beef in the lettuce cup and top with pineapple salsa and green onions.
