Ingredients
- phyllo dough
- 1/3 cup arrowroot flower
- 1/4 cup ghee or butter
- 1/2 white onion, diced
- 3 large carrots, diced
- 1 stalk of celery, diced
- 3 garlic cloves, minced
- 2 tsp minced thyme
- 1 tbs fresh parsley, minced
- 1 3/4 cup chicken broth
- 1/2 cup nutpods original creamer
- 1 lb chicken breast
- 1/2 cup frozen peas
- salt, to taste
- pepper, to taste
Instructions
- preheat oven to 400 & make sure the phyllo is thawed (read package instructions)
- boil the chicken breast while you prep the chicken pot pie. it should take about 10-15 minutes to cook the chicken.
- in a separate pot on medium-high heat, melt the ghee and add the garlic, onion, celery, and carrots. season with salt and pepper. saute for 4-5 minutes.
- add the flour, thyme, parsley, nut pods, and chicken broth. stir to combine. turn heat to low and wait for a simmer.
- while that simmers, dice/shred the cooked chicken.
- once simmering, add the cooked chicken and frozen peas to the mixture. stir to combine.
- pour the mixture into a pie dish.
- take a piece of phyllo and press it into a rose like shape. repeat until the top is covered with phyllo.
- bake in the oven for 15-20 minutes or until top is golden.
