Chicken Pot Pie

Ingredients

  • phyllo dough
  • 1/3 cup arrowroot flower
  • 1/4 cup ghee or butter
  • 1/2 white onion, diced
  • 3 large carrots, diced
  • 1 stalk of celery, diced
  • 3 garlic cloves, minced
  • 2 tsp minced thyme
  • 1 tbs fresh parsley, minced
  • 1 3/4 cup chicken broth
  • 1/2 cup nutpods original creamer
  • 1 lb chicken breast
  • 1/2 cup frozen peas
  • salt, to taste
  • pepper, to taste

Instructions

  1. preheat oven to 400 & make sure the phyllo is thawed (read package instructions)
  2. boil the chicken breast while you prep the chicken pot pie. it should take about 10-15 minutes to cook the chicken.
  3. in a separate pot on medium-high heat, melt the ghee and add the garlic, onion, celery, and carrots. season with salt and pepper. saute for 4-5 minutes.
  4. add the flour, thyme, parsley, nut pods, and chicken broth. stir to combine. turn heat to low and wait for a simmer.
  5. while that simmers, dice/shred the cooked chicken.
  6. once simmering, add the cooked chicken and frozen peas to the mixture. stir to combine.
  7. pour the mixture into a pie dish.
  8. take a piece of phyllo and press it into a rose like shape. repeat until the top is covered with phyllo.
  9. bake in the oven for 15-20 minutes or until top is golden.
